WINE MAKING PROCESS
The Yoichi Nobori Rosé de Noir is produced using a natural winemaking approach. Fermentation is carried out using wild yeasts, and the grapes undergo whole-cluster fermentation. Minimal to no sulfur dioxide is added during the winemaking process. Following fermentation, the wine is aged for one year in French oak barrels, with 5% of the barrels being new.
