WINE MAKING PROCESS
Blandy's 10 Years Old Malmsey is produced from 100% Malvasia grapes. Fermentation takes place in stainless steel tanks with natural yeast, and is arrested by fortification with grape brandy after about 48 hours, retaining a specific degree of sweetness. The wine is then aged using the Canteiro system, a traditional method where casks are moved between different temperature zones in the lodge over time. This process occurs in seasoned American oak casks, and the final wine is a blend of vintages with an average age of 10 years. Regular racking and fining are conducted before bottling.
