ABOUT THIS WINE
The 100 x 100 Monastrell 2018 is a single-varietal wine from Bodega Asensio Carcelén, situated in the Jumilla D.O.P. of Spain. The winery, established in the late 19th century, is managed by the fourth generation of the family, who are dedicated to organic farming and producing wines that showcase the unique character of the Jumilla terroir. The vineyards are located at high altitudes on sun-drenched plateaus, characterized by poor, stony, limestone soils, and feature old, dry-farmed bush vines. The winery's commitment to organic viticulture, with certification obtained in 2011, underscores their respect for the environment and traditional winemaking practices.

WINE MAKING PROCESS
The winemaking process for 100 x 100 Monastrell begins with a cold maceration for 24-48 hours at 8°C, followed by fermentation in temperature-controlled stainless steel tanks. Maceration occurs within a controlled temperature range of 24-28°C. While specific aging for the 2018 vintage is not detailed, the 2016 vintage was aged for 14 months on its lees, with a portion in stainless steel and a small percentage in French oak barrels, incorporating batonnage. Clarification is achieved using natural bentonite. The winery emphasizes organic viticulture and manual harvesting.
