WINE MAKING PROCESS
Grapes for the Rust en Vrede 1694 Classification are hand-picked and sorted, with different parcels and clones vinified separately. Destemmed and crushed grapes undergo fermentation in open-top tanks for 14-21 days, utilizing pump-overs and manual punch-downs. Malolactic fermentation occurs in barrel, followed by 18 to 22 months of aging in 100% French oak barrels, with a portion of new oak.
