WINE MAKING PROCESS
The winemaking process for François Chidaine Clos du Breuil involves pneumatic pressing of the grapes. Fermentation is carried out using indigenous yeasts in large 600 or 620-liter demi-muid barrels, a process that can last up to six months. Malolactic fermentation is not intentionally pursued. Following fermentation, the wine undergoes aging on its fine lees in these demi-muids for 6 to 11 months. The vineyard practices are organic since 1992 and biodynamic since 1999, with no chemical phytosanitary products used and cover crops sown between rows. Yields are kept low, and harvesting is done manually with successive sorting.
