WINE MAKING PROCESS
The winemaking process for 34 Centuries Assyrtiko 2021 begins with cold maceration of the grapes. Fermentation is carried out using selected, natural, indigenous yeasts. Approximately 10% of the wine is fermented in oak barrels, while the remainder is fermented in stainless steel tanks. Following fermentation, the wine is aged on its lees for at least 8 months before bottling, with further aging occurring in the bottle.
