WINE MAKING PROCESS
The production of Mélange à Trois Branco begins with gentle destemming and crushing of the grapes. The resulting must is protected from oxidation and undergoes a static decantation at low temperatures for 24 hours. Each grape variety is fermented separately in stainless steel tanks at a controlled temperature of 16°C for about 20 days, preserving freshness and aromatics. Following fermentation, 85% of the wine matures for three months in stainless steel, while the remaining 15% is aged in French oak barrels for the same period. The final blend is then assembled and bottled.
