WINE MAKING PROCESS
The winemaking process for Mélange à Trois begins with the gentle destemming and crushing of the grapes. The must is then protected from oxidation and clarified through static decantation at low temperatures. Each grape variety is vinified separately in stainless steel vats at a controlled temperature of 16°C, with fermentation lasting about 20 days. Post-fermentation, 85% of the blend is aged for three months in stainless steel, while the remaining 15% undergoes a similar aging period in French oak barrels. Finally, the wines are blended and bottled to create the finished product.
