WINE MAKING PROCESS
The Moni Bianco 2021 is produced through spontaneous fermentation using indigenous yeasts. Following fermentation, the wine undergoes a six-month aging period on its lees in stainless steel tanks. Prior to fermentation, the grapes are macerated on their skins for six days. The harvest is conducted manually. The winemaking approach is characterized by minimal intervention, with no filtration and minimal or no added sulfites.
