Métis embodies its name, 'mixed race,' as a deliberate blend that changes annually, reflecting the diversity of Domaine Labet's 45 small vineyard parcels in Sud Revermont. This cuvée tells the story of each vintage through a field blend of classic Jura grapes and rare ancestral varieties, representing a modern, yet deeply rooted, approach to Jura winemaking focused on purity and terroir expression. Its distinctiveness lies in the annual variation of its blend, the inclusion of rare, ancient grape varieties, and its classification as a Vin de France, which allows for creative freedom outside the strict AOC rules.

WINE MAKING PROCESS
Domaine Labet employs non-interventionist winemaking, with fermentation occurring with native, indigenous yeasts. Different grape varieties are often vinified separately before blending. A semi-carbonic maceration with whole bunches is sometimes used. The wines are produced in an 'ouillé' (topped-up) style to avoid oxidation and aged in used 228-liter barrels (typically 4-10 years old) for approximately 8 to 10 months. The wines are generally unfined and unfiltered, with very low total SO2 (under 20mg/L for one vintage).
