WINE MAKING PROCESS
The Abbazia di Novacella Pinot Grigio is produced using 100% Pinot Grigio grapes. Approximately two-thirds of the wine undergoes fermentation and aging in stainless steel tanks, while the remaining one-third is fermented and aged in 30 hectoliter neutral oak casks. Fermentation occurs at controlled temperatures between 17-19°C, often utilizing indigenous yeasts. The wine typically matures for about six months before bottling.
