ABOUT THIS WINE
The Abbazia Prosecco Extra Dry is a sparkling white wine from the Veneto region of Italy, produced by C.V.A.S.G. srl. Its primary grape is Glera, a variety with a long history in the region, once known as Pucino and reportedly favored by Empress Livia Augusta. The wine is made in the traditional style of northern Italian spumante. The Veneto region itself boasts ancient winemaking roots, with vineyards situated on rocky, mineral-rich alluvial soils that are conducive to grape cultivation. C.V.A.S.G. srl is a producer in this area that combines historical winemaking practices with modern approaches.

WINE MAKING PROCESS
The Abbazia Prosecco Extra Dry is produced using the Charmat method, also known as tank fermentation. This involves a secondary fermentation in large, pressurized tanks, which helps to preserve the wine's fresh fruit character and lively effervescence. The grapes are gently pressed using soft air bag techniques to extract the juice without harshness. Fermentation is carefully managed in temperature-controlled tanks for 60 days, with a specific exclusion of aeration to maintain the wine's bright profile. The Glera grape, making up at least 85% of the blend, is the primary contributor to the wine's identity. Hand-harvesting of the grapes is employed to ensure quality.
