WINE MAKING PROCESS
The Acinatico Valpolicella Ripasso is produced using the traditional Ripasso method, which involves a secondary fermentation of the Valpolicella wine on the lees of Amarone or Recioto. This process enhances the wine's body and complexity. Following fermentation, the wine undergoes aging for approximately 12 months in small oak casks, followed by a further 3 months of refinement in the bottle. The grapes are sourced from Accordini Stefano's vineyards located in the higher elevations of the Valpolicella Classica region.
