WINE MAKING PROCESS
The grapes are hand-harvested from mid-slope schistose vineyards ranging from 100 to 550 meters in elevation. Upon arrival at the winery, the fruit is destemmed and crushed. Fermentation takes place in temperature-controlled stainless steel vats at approximately 24°C, accompanied by prolonged maceration to optimize extraction of color, structure, and polyphenols. Following malolactic fermentation, a portion of the final blend is aged for 12 months in a combination of French and American oak barrels before bottling.
