ABOUT THIS WINE
Akakies Rosé from Kir-Yianni Estate is a unique Greek PDO rosé, exclusively produced from the Xinomavro grape. The wine's name, meaning 'bougainvillea' in Greek, reflects its lively and colorful character. Kir-Yianni Estate, founded by Yiannis Boutaris and now managed by his son Stellios, is dedicated to showcasing indigenous Greek grape varieties, particularly Xinomavro, from the diverse terroirs of Northern Greece. This rosé originates from the PDO Amyndeon region in Macedonia, where vineyards are situated at high altitudes, contributing to the grape's freshness and aromatic complexity. The estate emphasizes organic farming and minimal intervention in its winemaking practices.

WINE MAKING PROCESS
Akakies Rosé is produced using 100% Xinomavro grapes, harvested early to preserve acidity. The winemaking process involves fermentation in stainless steel tanks at controlled, low temperatures. For the sparkling aspect, the Charmat method is employed, where the secondary fermentation takes place in closed tanks to create effervescence. The wine is then aged on its fine lees for three months in tank, with regular batonnage to enhance texture and complexity. Organic farming practices are utilized in the vineyards.
