ABOUT THIS WINE
Kir-Yianni's Akakies Sparkling 2021 is a dry rosé wine crafted from 100% Xinomavro grapes, originating from the PDO Amyndeon appellation in Macedonia, Greece. The wine's name, 'Akakies', references the Robinia pseudoacacia tree found in the area. Kir-Yianni, established in 1997 by Yiannis Boutaris, is now guided by his son Stellios, embodying a fifth generation of winemaking expertise that balances innovation with heritage. The vineyards for this sparkling wine are situated in Agios Panteleimonas, Amyndeon, at an altitude exceeding 600 meters, near lakes, on sandy soils. This specific location and the early harvest timing in 2021 were key to achieving the wine's characteristic balance. The wine stands out as a sparkling rosé made from Xinomavro, a grape more commonly recognized for its red wine production, showcasing a different facet of its character.

WINE MAKING PROCESS
The Kir-Yianni Akakies Sparkling 2021 is produced using 100% Xinomavro grapes from the PDO Amyndeon region. The grapes are harvested early to ensure a balance of acidity and sugar. The first fermentation occurs in stainless steel tanks at low temperatures, with a period of contact with fine lees and mild stirring. The wine then undergoes a secondary fermentation in closed tanks via the Charmat method to create its bubbles. Post-fermentation, the wine is aged briefly in stainless steel to preserve its freshness.
