WINE MAKING PROCESS
The Akissare 2024 begins with a pre-fermentation cold soak for 18 hours to enhance aroma and color extraction. Fermentation is spontaneous, utilizing only indigenous yeasts from the Ikarian vineyards to capture the essence of the terroir. The wine is then aged for five months on its lees, followed by a month in stainless steel tanks for natural stabilization and clarification without filtration. Grapes are hand-harvested from certified organic vineyards, and winemaking by-products are composted and returned to the soil, reflecting the winery's commitment to sustainability and minimal intervention.
