WINE MAKING PROCESS
The production of Alasia Commandaria begins with grapes grown in the Commandaria region, at altitudes between 500 and 900 meters, on barren, stony, and volcanic soils. The indigenous Mavro and Xynisteri grapes are left to overripen on the vine. After harvesting, the grapes are sun-dried for 7 to 10 days to concentrate their sugars. The pressed must then undergoes a slow, natural fermentation lasting 60 to 90 days. Fermentation may be stopped by adding grape spirit to reach a minimum of 15% alcohol by volume. The wine is then subjected to mandatory oxidative aging in oak barrels for at least two years.
