ABOUT THIS WINE
The Albillo Viñas Viejas 2017 from Dominio del Águila is a distinguished white wine from La Aguilera, Ribera del Duero, Spain, crafted from 100% Albillo Mayor grapes. Founded in 2010 by Jorge Monzón and Isabel Rodero, Dominio del Águila champions organic farming and traditional winemaking, utilizing ancient, often ungrafted vines. The 2017 vintage, despite facing challenging weather conditions like severe frosts, is celebrated for its remarkable balance and freshness. The wine's unique character is attributed to its high-altitude vineyards, diverse soil composition, and a meticulous, non-interventionist winemaking approach, resulting in a wine with a 'Burgundian profile' and significant aging potential.

WINE MAKING PROCESS
The winemaking process for Albillo Viñas Viejas begins with whole clusters of Albillo Mayor grapes being foot-trodden before pressing. Fermentation is carried out using indigenous yeasts in French oak casks at low cellar temperatures, a slow process that can take up to a year. The wine is aged for 35 months in French oak barrels. Throughout the process, there is no stirring of the lees or racking, and minimal sulfur is used. The wine is bottled without fining or filtration, preserving its natural character and texture. Sustainability is a core principle, with organic and biodynamic farming practices employed in the vineyards.
