WINE MAKING PROCESS
The winemaking process for Lodali Alchimia begins with a manual harvest of the grapes into boxes. The fruit undergoes soft pressing, followed by maceration at a controlled temperature for approximately 18 days. This extended maceration allows for the extraction of desirable compounds from both Nebbiolo and Petit Verdot. Following fermentation, the wine is aged in barriques, a process that contributes to its structure and complexity. It then rests for an additional 6 months in the bottle to further integrate and mature before being released.
