WINE MAKING PROCESS
Alegria Manzanilla is produced using the first gravity pressings of Palomino grapes, with fermentation occurring at 22°C and early removal of lees. The wine is then biologically aged for over five years under flor in oak casks as part of the traditional Criaderas and Soleras system. The solera for this Manzanilla is noted for having an uncommonly low number of six criaderas.
