WINE MAKING PROCESS
The Alheit Vineyards Hereafter Here 2021 is produced using minimal intervention winemaking techniques. Grapes are harvested early and whole-bunch pressed, with the juice lightly settled without additions. Fermentation occurs naturally with wild yeasts in old barrels of various sizes, a process that can extend over several months. Malolactic fermentation is intentionally avoided to maintain the wine's natural acidity. Following fermentation, the wine ages on its lees in old barrels for about 12 months, then spends another 6 months in tank or vats before bottling. No new oak is used in the production process.
