WINE MAKING PROCESS
The grapes for this Agiorgitiko are sourced from selected vineyards across the hilly terrains of the Peloponnese. Upon arrival at the winery, the fruit undergoes careful destemming and gentle crushing. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the vibrant primary red fruit aromas and delicate floral notes characteristic of the variety. A relatively short maceration period is employed to manage tannin extraction, ensuring a smooth and supple mouthfeel. The wine is aged primarily in stainless steel, with a small portion occasionally seeing neutral oak to add subtle complexity without overpowering the fresh fruit profile.
