WINE MAKING PROCESS
The Gimenez Mendez Alta Reserva Sauvignon Blanc is produced from 100% Sauvignon Blanc grapes. The bunches are destemmed and gently crushed before a quick press to extract fresh juice. Fermentation occurs in stainless steel tanks at controlled low temperatures for 15 days. Following fermentation, the wine is aged on its lees for one month with stirring to develop texture. The wine is then clarified, filtered, and stabilized without cold stabilization before bottling to maintain its freshness. No oak is used in the production process.
