WINE MAKING PROCESS
The winemaking process for ALUZÉ Pessegueiro involves harvesting grapes in September, which are then stemmed and partially pressed before being conveyed by gravity to fermentation tanks. Fermentation takes place in wooden and stainless steel vats or tanks at controlled temperatures, with careful maceration management. Following fermentation, the wine is aged for 12 months in various wooden vessels, including foudre, oak tanks, concrete vats, or oak barrels, contributing to its final profile.
