WINE MAKING PROCESS
The production of Anselmo Mendes Alvarinho Contacto begins with hand-harvested grapes from selected vineyards in Monção e Melgaço, transported quickly to the winery. A defining characteristic is the short skin maceration, referred to as 'Contacto,' which imparts structure. Following this, the must undergoes cold clarification at 12°C before fermentation at controlled temperatures. The wine is then aged for a minimum of three to four months on fine lees, with regular bâtonnage to develop texture and complexity.
