WINE MAKING PROCESS
Amalia Brut is produced using the traditional method, also known as the 'Champenoise' or 'Classic Method,' which involves a secondary fermentation directly in the bottle to create its effervescence. The base wine is fermented in stainless-steel tanks at low temperatures to preserve aromatics. Following the initial fermentation, the wine undergoes an aging period of 9 to 12 months on its lees before being disgorged. The Moschofilero grapes are harvested early to maintain acidity and a lower alcohol content. The vineyards are managed using a combination of Lutte Raisonnée and conventional farming practices.
