WINE MAKING PROCESS
The production of Farina Amarone della Valpolicella Classico 2016 begins with hand-harvested grapes from the Valpolicella Classico region. These grapes undergo the *appassimento* process, where they are air-dried for approximately four months on wooden slats or drying racks to concentrate sugars and flavors. Fermentation takes place in stainless steel tanks at 28°C with frequent pumping-over for 2-3 weeks. Malolactic fermentation is carried out in cement vats. The wine is then aged for 18 months in a combination of large Slavonian oak barrels and barriques, followed by 6 months in cement vats before bottle refinement.
