WINE MAKING PROCESS
The winemaking process for Monte Santoccio Amarone della Valpolicella Classico begins with a long appassimento, or drying, of the grapes. Following this, the grapes undergo extended maceration and fermentation in stainless steel tanks, often with spontaneous fermentations. The wine is then aged for a significant period, typically two years in tonneaux (large oak barrels), with further refinement in large barrels. This meticulous process is designed to concentrate flavors and build structure.
