ABOUT THIS WINE
Tommasi Amarone della Valpolicella Classico 2019 is a distinguished Italian red wine from Tommasi Viticoltori, a family winery with over a century of history. Produced in the Valpolicella Classica region of Veneto, it is crafted primarily from Corvina, Corvinone, Rondinella, and Oseleta grapes. The wine's unique character is shaped by the traditional *appassimento* process, where grapes are dried for several months to concentrate their sugars and flavors, followed by extensive aging in large Slavonian oak casks. The 2019 vintage, marked by warm summer temperatures, yielded grapes with high polyphenol and acidity levels, contributing to the wine's structure and complexity.

WINE MAKING PROCESS
The production of Tommasi Amarone della Valpolicella Classico 2019 begins with grapes sourced from select family vineyards in Valpolicella Classica. A crucial step is the *appassimento* process, where harvested grapes are dried for several months in *fruttaio* (drying rooms) until the following February, losing approximately 50% of their weight to concentrate sugars. Fermentation takes place in wooden vats over approximately 20 days, with an extended skin maceration and alcoholic fermentation period of 40 days at 26-28°C. Following fermentation, the wine is aged for three years in large 35-hectoliter Slavonian oak casks, followed by one year of bottle aging before release.
