WINE MAKING PROCESS
The production of this Amarone della Valpolicella begins with the careful selection of grapes, which are then subjected to the 'appassimento' process, drying in a ventilated room for 100-120 days. This concentrates the sugars and flavors. Following re-selection and crushing, the wine undergoes fermentation and maceration for 21-28 days. Post-fermentation, it rests in French vats for 24 months, followed by at least 24 months of bottle aging before market release. The vineyard practices involve limited yields from old vines.
