WINE MAKING PROCESS
The production of Amarone della Valpolicella Le Guaite di Noemi 2012 begins with the appassimento process, where harvested grapes are dried for 100-120 days. This concentrates sugars, polyphenols, and aromas. The dried grapes are then pressed, followed by cold maceration and fermentation with selected yeasts at controlled temperatures. Malolactic fermentation is also carried out. The wine undergoes extensive aging, typically 48 months in new French oak barriques, followed by a minimum of 72 months of bottle aging. Regulations require a minimum of two years of aging for Amarone DOCG.
