WINE MAKING PROCESS
The production of Luigi Righetti Amarone della Valpolicella 2021 begins with grapes that undergo prolonged ripening on the vine. Subsequently, these grapes are dried for an extended period, typically from October to March (3 to 5 months), a process known as *appassimento* or *passerillage*. This concentration method is carried out according to the appellation's regulations. Following this, the wine is aged for 18 months in a combination of cask and foudre, with a further 12 months dedicated to bottle refinement.
