ABOUT THIS WINE
Amarone Kyrenia 2018 from Zýmē di Celestino Gaspari is an Amarone della Valpolicella DOCG from the Veneto region of Italy. The wine's name, 'Kyrenia,' draws inspiration from ancient Greek ships, signifying a new direction for Zýmē towards refined and accessible expressions of Amarone. The producer, Zýmē, founded by Celestino Gaspari, is rooted in a philosophy of natural winemaking, emphasizing respect for the environment and the inherent expression of the vine. The estate's logo, a vine leaf within a pentagon, symbolizes the five core elements of winemaking: man, vine, earth, sun, and water.

WINE MAKING PROCESS
The winemaking process for Amarone Kyrenia 2018 begins with the appassimento technique, where grapes are naturally semi-dried for at least 90 days. Following pressing in January, fermentation takes place in steel tanks and concrete vats without added yeasts or biotechnical agents. Maceration on the skins lasts for over two months, with minimal pumpovers or punchdowns. The wine is then aged for a minimum of five years in large Slavonian oak ovals, followed by at least 12 months of bottle aging. Regular topping-up is the only operation performed during aging.
