WINE MAKING PROCESS
The Andes Plateau Cota 500 Chardonnay is produced using 100% Chardonnay grapes. The winemaking process involves whole cluster pressing and fermentation with indigenous yeasts. The wine does not undergo malolactic fermentation. Aging takes place in concrete tanks for five months or in used French barrels for up to six months, depending on the vintage. The grapes are sourced from vineyards planted above 500 meters, with colluvial soils of volcanic origin mixed with alluvial soils. Farming practices are organic, and all vineyard work is performed by hand.
