WINE MAKING PROCESS
The Ca' del Bosco Annamaria Clementi Riserva 2015 is produced using the traditional method. Grapes are fermented in small oak casks, with malolactic fermentation occurring during six months of aging on lees. The wine then undergoes an average of 8 years of maturation sur lies. Ca' del Bosco employs a unique 'berry spa' system for grape cleaning and a patented disgorgement process that avoids oxidative shock and minimizes sulfite addition. The wine is finished with a Zero Dosage, meaning no sugar is added after disgorgement.
