WINE MAKING PROCESS
The winemaking process for Anthium Bellone begins with maceration on the skins to extract aromas, followed by a soft pressing. Fermentation is spontaneous, utilizing indigenous yeasts over 10-12 days at temperatures between 18-20°C. Some sources indicate cryomaceration at 8°C. The wine is then aged with refinement on noble lees and includes passages in French oak barriques and tonneaux. The harvest occurs in late September.
