WINE MAKING PROCESS
The Antico Monastero Dolcetto d'Alba 2021 is produced using traditional methods. Grapes are de-stemmed and softly pressed before undergoing fermentation and maceration on the skins for 7-8 days at controlled temperatures. The wine is then matured in steel tanks for a brief period, followed by about 4 months of bottle conditioning. Micro-oxygenation is sometimes employed to refine tannins and aromatic complexity. The harvest typically occurs in September.
