WINE MAKING PROCESS
The Antico Monastero Langhe Chardonnay undergoes a meticulous winemaking process. Grapes are hand-harvested and then subjected to a 24-hour skin contact period at low temperatures (5°C) before classic white vinification. Fermentation takes place in stainless steel tanks at controlled, low temperatures to encourage a slow process. Following fermentation, the wine ages on its lees for about 12 months. Some producers may also age a portion of the wine in French wooden barrels. The wine is then aged for at least three months in bottle before release.
