WINE MAKING PROCESS
The Antico Monastero Piemonte Passito Barbera is produced using the traditional Passito method, where a portion of ripe Barbera grapes are dried to concentrate their sugars and flavors. Following harvest, the grapes undergo fermentation in stainless steel vats with a skin contact period of 6 days. The wine is then aged for 6 months in stainless steel tanks to allow for integration and development. This process is overseen by Bosio Family Estates, a winery committed to expressing the character of Piedmontese grapes and terroir.
