ABOUT THIS WINE
Pyros Appellation Malbec is a 100% Malbec from the Pedernal Valley in San Juan, Argentina. The Pedernal Valley is characterized by its calcareous soils and a cold desert climate with significant diurnal temperature variations. The name 'Pyros' is derived from the ancient Greek word for fire, referencing the flint-like stones found in the valley.

WINE MAKING PROCESS
The winemaking process for Pyros Appellation Malbec involves hand-harvesting grapes at night or dawn to preserve freshness. A cold pre-fermentation maceration is employed for 72 hours at around 10°C. Fermentation takes place in stainless steel tanks, concrete eggs, and French oak barrels, utilizing both inoculated and native yeasts. The wine is then aged for approximately 12 months in a mix of French and American oak barrels, with varying percentages of new and used oak. Following barrel aging, the wine undergoes additional bottle aging before release.
