WINE MAKING PROCESS
Aragosta Frizzante is produced using grapes from vineyards located in the Alghero area, characterized by alluvial and calcareous soils. The vines range from 3 to 15 years old. Viticulture involves harvesting grapes in the second half of August with a focus on maintaining low sugar content, influenced by the hot and dry climate. Vinification includes fermentation at 16°C for 7-10 days, followed by a month-long second fermentation in an autoclave to achieve the frizzante style. There is brief contact with the skins during the pressing stage. The wine ages during this refermentation process in the autoclave.
