ABOUT THIS WINE
Domaine du Pélican was founded in Arbois by Guillaume d'Angerville, proprietor of the famed Domaine Marquis d'Angerville in Volnay, Burgundy, alongside estate manager François Duvivier. Inspired by a blind tasting where a Jura white rivaled fine Burgundy, d'Angerville sought out prime terroirs in Arbois. The estate acquired exceptional biodynamic vineyards, including historic parcels from Jacques Puffeney. The domain takes its name from the pelican featured on Arbois's civic crest.

WINE MAKING PROCESS
The name 'Ouillé' refers to the Burgundian technique of systematically topping up oak barrels to prevent oxygen exposure and flor yeast formation. Grapes are grown on complex Jurassic marls and limestone scree using certified biodynamic methods. Fermentation occurs with native yeasts in 500-liter oak barrels. The wine is aged for ten months in neutral oak barrels before blending in stainless steel tanks prior to bottling.
