WINE MAKING PROCESS
The production of Arbois Vin Jaune begins with fermentation in stainless steel tanks. The defining characteristic is its extended aging process, which lasts a minimum of 60 months in oak barrels. During this period, the wine matures under a veil of yeast, a technique known as 'sous-voile.' This controlled oxidative aging is fundamental to developing the wine's distinctive complex aromas and flavors. The grapes are hand-harvested to ensure quality.
