WINE MAKING PROCESS
The production of Arbois Vin Jaune involves a unique maturation process. After initial fermentation, the wine is aged in oak barrels for a minimum of six years and three months. During this period, a veil of yeast develops on the surface of the wine, creating a controlled oxidative environment. This process, similar to that used for some Sherries, allows the wine to develop its characteristic complex aromas and flavors. The barrels are not topped up, allowing for the development of the yeast veil and contributing to the wine's concentration. This extended aging under a yeast cap is the defining technique for Vin Jaune.
