Arktika Pétillant Naturel

This wine is produced using the proprietary 'Methode Arktika,' designed to ensure clean fruit expression without the unpredictability of standard ancestral-method sparkling wines. At harvest, a portion of the organic grape must is frozen immediately to preserve its natural sugars. The remaining must undergoes spontaneous fermentation with native yeasts to create a bone-dry base wine, which is left in the winery courtyard over the winter for natural cold clarification. In spring, the frozen must is thawed and blended back into the base wine before bottling. This reintroduces natural sugars and yeasts to trigger a secondary fermentation in the bottle, creating a fine sparkle without the need for disgorgement.
