WINE MAKING PROCESS
Arnaldo Caprai Le Molacce Trebbiano Spoletino is produced using 100% Trebbiano Spoletino grapes. The grapes are harvested in late September, reflecting their late-ripening nature. Fermentation occurs in stainless steel tanks at controlled temperatures between 15-18°C. A key technique employed is bâtonnage, or lees stirring, which contributes to the wine's texture and complexity. Following fermentation, the wine is aged for 3 months in stainless steel tanks. It then undergoes a further aging period of at least 3 months in bottle before its release to the market.
