WINE MAKING PROCESS
The production of La Cappuccina Arzimo Recioto di Soave involves a meticulous process focused on concentrating the grape's natural potential. Hand-picked Garganega grapes are carefully placed in crates and undergo a drying process for several months in specialized rooms. This 'appassimento' method concentrates sugars and flavors. Following drying, the grapes are pressed, and the resulting must is fermented on its lees in oak barriques for ten to twelve months. The wine then continues its maturation with an additional 14 months on lees in oak barriques, followed by at least twelve months of bottle aging before release. The winery adheres to organic and biodynamic farming principles throughout its viticultural practices.
