ABOUT THIS WINE
Domaine Hatzimichalis, established in 1973 by Dimitri Hatzimichalis, is a pioneering estate located in the Atalanti Valley of Central Greece. The 'Alepotrypa' (meaning foxhole) vineyard is a unique single-vineyard site situated on an ancient seabed close to the Aegean Sea. This specific terroir, cooled by maritime breezes and mountain winds, imparts a distinctive saline minerality to the grapes. The estate was among the first on the Greek mainland to demonstrate that Assyrtiko, traditionally famous in volcanic Santorini, could produce world-class, terroir-driven wines in a continental climate.

WINE MAKING PROCESS
The grapes are hand-harvested exclusively by women, a tradition established by the founder who believed they handled the sensitive fruit with greater care. Vinification takes place in temperature-controlled stainless steel vats to preserve the vibrant, primary fruit characteristics of the Assyrtiko grape. Following fermentation, the wine is aged on its fine lees for six months in stainless steel tanks, which enhances its structural body, texture, and mid-palate complexity prior to bottling.
