ABOUT THIS WINE
The Assyrtiko Alepotrypa Vineyard 2023 from Hatzimichalis Estate is a single-vineyard expression of the Assyrtiko grape, classified as PGI Atalanti Valley. The 'Alepotrypa' vineyard, meaning 'foxhole,' is situated close to the sea on clay loam and sandy soils, a location historically covered by the sea, which is believed to impart salinity to the wine. Hatzimichalis Estate, a family-run winery, cultivates 220 hectares in the Atalanti Valley, benefiting from a unique microclimate. This wine is recognized for demonstrating the quality of Assyrtiko produced outside of Santorini, highlighting its saline character and minerality. The 2023 vintage is characterized by its fresh, fruity profile.

WINE MAKING PROCESS
The Assyrtiko Alepotrypa Vineyard is produced using white vinification methods in temperature-controlled stainless steel vats to maintain freshness. Following fermentation, the wine spends six months on its fine lees in vats, which enhances its body and structure. The grapes are hand-harvested, and the estate employs sustainable practices, including using their own water reservoirs for irrigation and composting vineyard waste for natural fertilizer. The wine is unoaked.
